Handmade from bean to invader

Process

Design
We designed the invader in 3D CAD.
    example3

Machining
Our design was produced on a CNC machine to create our mold. The metal plate was then used to thermoform plastic, creating the molds we use to shape the chocolate into an invader.
    example3

Beans
Single origin cocoa beans are sorted by hand to remove any foreign materials or less than perfect quality beans.
    example3

Roasting
Once the beans are slowly roasted the shells are removed.
    example3

Ingredients
We mix cocoa with evaporated cane juice and cocoa butter.
    example3

Grinding
The cocoa grinds in a granite melangeur for 4 days. When complete, its texture is extremely smooth and the flavor is nuanced and in balance.

Tempering and Molding
Once finished, the chocolate is tempered and molded into invaders.

Yes.
What ingredients are in the Chocolate Invader?
Cocoa Beans, Evaporated Cane Juice, Cocoa Butter. Our facility also processes dairy and nuts.
How long does the chocolate making process take?
From whole beans to finished chocolate, it's a four-day process.
What is a small batch Bean-to-Bar Chocolate Workshop?
We make chocolate, using our bare hands (and a few machines), in small batches. This allows us to create great chocolate because there is human interaction every step of the way.

What variety of cocoa bean do you use?
The 2nd batch is made from Peruvian cocoa beans. The 1st batch was made from trinitario beans from Costa Rica. Trinitario is one of the three main varieties of Theobroma Cacao, the tree from which cocoa pods grow.
Where can I get some more of your delicious chocolate?
